Homemade Sundried Tomato Pesto

So I love pesto and I love sundried tomatoes, so why not combine them?  My boyfriend, Kevin, also doesn't really like pesto, so this version is much more to his liking.  He doesn't love basil as much as I do, so I can adjust it so that we both can enjoy it.  Tricky thing with pesto: a food processor is key to make it the proper consistency.  I didn't have one for a long time, but this past Christmas, Kevin bought me one and I use it as often as possible.  Don't worry, I get the people who are against them, but I love cooking and I love cooking tools, so my (Kevin's) investment was worth it.  

Another awesome thing about pesto is that you truly can do whatever you want with it.  My least favorite part of classic pesto is the pine nuts, so when I make it myself I just omit them.  There are so many different combination possibilities, and pesto is so versatile, I suggest trying it out.  And if you like sundried tomatoes, this super easy recipe is totally a necessity for your kitchen.  I apologize, again, for only having one photo.



Ingredients:

1 jar of sundried tomatoes packed in oil (I suggest getting the ones in oil, that flavored oil totally makes a difference)
1/2 cup fresh basil
1 garlic clove
1/4 cup Parmesan, freshly grated
olive oil to achieve proper consistency
salt and pepper to taste

Directions:
  1. Toss the garlic clove into the food processor and pulse a couple times.
  2. Add everything else in, minus the olive oil, and pulse it until its well combined.
  3. Stream in the olive oil until you reach your desired texture.
  4. Use the salt and pepper as needed.
  5. ENJOY!
Suggested Uses:
  • Add it to pasta in place of sauce
  • Serve as a dip with toasted bread
  • Substitute the pesto for pizza sauce
  • Spread on a Caprese sandwich (my personal favorite)
